What You'll Need

Flour (I use King Arthur's Unbleached Bread Flour)
Water (I use Kroger bottled Spring Water)
A jar (wide mouth mason jar preferred)
A little patience (and maybe a little grace for yourself)
Day 1: Mix your flour and water until it looks like thick, chunky peanut butter. It should even stay in the jar if you flip it upside down! Take the lid (not the ring) from your jar and sit it loosely on top. Now the most important step-give your new friend a name and mark the starting line. Day 2: Time for a little snack. Add a bit more flour and water to maintain that cozy consistency. Make sure there's room for it to grow and breathe. Day 3: Keep up the daily feeding. If the jar is getting too full, just scoop a little out to make space for the magic to happen. Look for tiny bubbles and notice how the scent begins to change. Day 4: Continue feeding and don’t worry if things look a bit strange—it is all part of the process! Remember, you don’t need fancy gadgets or perfect math to bake with love. Day 5: Watch for that beautiful rise. If it hasn't risen yet, don't give up. Time can vary based on kitchen temperature. If you feel unsure, just remember—people have been baking this way for generations. You’re doing better than you think.
